Your Hearty Cast (Ingredients)

  • Beans: 1 lb dried Tarbais or cannellini (soaked overnight)
  • Meats: 4 duck confit legs, 1 lb pork shoulder (1-inch cubes), ½ lb garlic sausage (Toulouse-style, sliced), ½ lb ventrèche or pancetta (cubed)
  • Aromatics: 1 large onion (studded with 4 cloves), 1 head garlic (top sliced off), 2 carrots (chunked), 1 leek (white part, halved)
  • Herb bundle: 4 thyme sprigs, 2 bay leaves, 6 parsley stems (tied)
  • Liquid: 6 cups chicken stock, 1 cup dry white wine
  • Crust: 1 cup fresh breadcrumbs, 2 tbsp duck fat (melted)
  • Seasoning: Salt, pepper

Day 1: Bean & Pork Base

Day 2: Assemble & Slow-Bake

  1. Preheat 325°F. Layer half beans in pot, nestle duck legs + sausage, top with remaining beans. Liquid should just peek—add stock if shy.
  2. Bake covered 1.5 hrs. Uncover, press meats down gently—crust forms on top.
  3. Mix breadcrumbs with melted duck fat. Sprinkle over surface. Bake uncovered 1 hr more until crust is mahogany and beans bubble lazily.
