  • For the marinade: 1.5 lbs chicken (bone-in, cut into pieces), 1 cup plain yogurt, 1 tbsp ginger-garlic paste, 1 tsp turmeric, 1 tsp red chili powder, 1 tsp garam masala, 1 tbsp lemon juice, salt.
  • For the rice: 2 cups basmati rice, 4 cups water, 2 bay leaves, 4 cloves, 2 cardamom pods, 1 cinnamon stick, 1 tsp salt.
  • For the biryani: 2 large onions (thinly sliced), 2 tomatoes (chopped), 1/4 cup fresh cilantro, 1/4 cup fresh mint, 1/2 tsp saffron (soaked in 2 tbsp warm milk), 3 tbsp ghee or oil, 1 tsp cumin seeds, 4 green cardamom pods, 4 cloves, 1 cinnamon stick, 1 tbsp biryani masala (or garam masala), 2 green chilies (slit), 1/4 cup fried onions (store-bought or homemade).
  • For serving: Raita (yogurt with cucumber and mint), lime wedges.

Step 1: Marinate the Chicken

In a large bowl, mix yogurt, ginger-garlic paste, turmeric, red chili powder, garam masala, lemon juice, and 1 tsp salt. Add chicken pieces, coat thoroughly, and marinate for at least 2 hours (overnight is best) in the fridge. This tenderizes the chicken and infuses it with flavor.

Step 2: Prepare the Rice

Rinse basmati rice under cold water until the water runs clear to remove excess starch. Soak for 30 minutes, then drain. Heat 3 tbsp ghee in a large, heavy-bottomed pot over medium heat. Fry sliced onions until golden brown (8–10 minutes), then remove half for garnish. Add cumin seeds, cardamom, cloves, and cinnamon to the pot. Sauté for 30 seconds until fragrant. Add tomatoes, green chilies, and biryani masala; cook until tomatoes soften (5 minutes). Add marinated chicken and cook for 10–12 minutes, stirring occasionally, until the chicken is half-cooked and the masala is thick.

Pro Tip: Fry onions slowly for sweet, caramelized flavor—don’t rush this step!

Step 4: Layer and Dum Cook

Now for the magic: layering. Spread half the par-cooked rice over the chicken masala in the pot. Sprinkle with half the cilantro, mint, and fried onions. Add the remaining rice, then top with the rest of the cilantro, mint, fried onions, and saffron-milk mixture. Drizzle 1 tbsp ghee over the top. Cover tightly with a lid (use foil or a damp cloth to seal if needed). Cook on low heat for 25–30 minutes to “dum” (steam), letting the flavors meld and the chicken finish cooking.

Step 5: Serve with Flair

Gently fluff the biryani with a fork to mix the layers without breaking the rice. Serve hot on a large platter, garnished with extra fried onions and cilantro. Pair with cooling raita, lime wedges, and a spicy pickle for the full experience. This dish is perfect for sharing, so gather your loved ones around!
