  • For the veggies: 1 small zucchini, 1 carrot, 1 cup spinach, 4 shiitake mushrooms, 1 cup bean sprouts, 2 tbsp sesame oil, salt.
  • For the sauce: 2 tbsp gochujang (Korean red pepper paste), 1 tbsp sesame oil, 1 tbsp honey, 1 tsp rice vinegar, 1 tsp water.
  • For topping: 4 eggs, 2 tbsp toasted sesame seeds, 2 green onions (sliced), kimchi (optional).
  • Equipment: A large skillet, small bowls for prep, rice cooker or pot.

Step 1: Cook the Rice

Rinse the rice under cold water until the water runs clear to remove excess starch. Cook in a rice cooker with 2.5 cups water or in a pot: bring to a boil, then reduce to low, cover, and simmer for 15 minutes. Let it rest, covered, for 5 minutes. Fluff and keep warm.
